My Creative Space: More Rings

This week I have been working on new rings. One of them, the Pegasus ring, was the one that I entered on the last week EST Challenge. Here they are:

Lemon Meringue Pie Recipe

Today I bring you a yummy recipe I tried this weekend: Lemon Meringue Pie. It´s delicious!


Ingredients
1 pie crust, baked
300 g white sugar
3 g salt
355 ml water
65 g cornstarch
80 ml water
4 eggs, separated
120 ml lemon juice
4 g lemon zest
45 g butter
2 g salt
100 g white sugar


Directions
Preheat oven. Combine 1 1/2 cups sugar, salt, and 1 1/2 cups water in a saucepan. Place over high heat and bring to a boil. In a small bowl, mix cornstarch and 1/3 cup water to make a smooth paste. Gradually whisk into boiling sugar mixture. Boil mixture until thick and clear, stirring constantly. Remove from heat.
In a small bowl, whisk together egg yolks and lemon juice. Gradually whisk egg yolk mixture into hot sugar mixture. Return pan to heat and bring to a boil, stirring constantly. Remove from heat and stir in grated lemon rind and butter or margarine. Place mixture in refrigerator and cool until just lukewarm.
In a large glass or metal bowl, combine egg whites and salt. Whip until foamy. Gradually add 1/2 cup sugar while continuing to whip. Beat until whites form stiff peaks. Stir about 3/4 cup of meringue into lukewarm filling. Spoon filling into baked pastry shell. Cover pie with remaining meringue.
Bake in preheated oven for 15 minutes, until meringue is slightly brown. Cool 1 hour before cutting.

Strawberry Recipe With Meringue


Here´s a delicious recipe that I wanted to share with you: Strawberry Cake.

Ingredients
517 g yellow cake mix
315 ml orange juice
4 eggs, separated
3 g grated orange peel
0.8 g cream of tartar
250 g sugar, divided
475 ml whipping cream
715 g fresh strawberries, divided


Directions
In a mixing bowl, combine cake mix, orange juice, egg yolks and orange peel. Beat for 4 minutes. Pour into two greased and floured baking pans; set aside. In a mixing bowl, beat egg whites and cream of tartar on medium until foamy. Gradually beat in 1 cup sugar, a tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Spread the meringue evenly over cake batter. Bake at 176 ÂșC for 35 minutes or until meringue is lightly browned. Cool in pans on wire racks (meringue will crack).
Beat cream until stiff peaks form.
Mash 1/2 cup of strawberries with remaining sugar; fold into whipped cream. Loosen edges of cakes from pans with a knife. Using two large spatulas, carefully remove one cake to a serving platter, meringue side up. Carefully spread with about two-thirds of the cream mixture. Slice the remaining berries; arrange half over cream mixture. Repeat layers. Store in the refrigerator.
