Jansson's Frestelse (Janssons's Temptation) Recipe

A relative of mine lives in Sweden and she says this dish is very famous and appreciated there. She shared the recipe of this yummy food with me and I´m sharing it with you.
If you are curious about the origin of the name, you can look it up here.

Ingredients:

  • 5 medium-large potatoes
  • 2 large red or yellow onions
  • 2 cans or bottles Swedish anchovies (about 25) (According to my friend, the origin of the anchovies is very important, and results may differ if another anchovies are used).
  • 1 1/2 cups of heavy cream
  • salt
  • pepper
  • 1 cup bread crumbs
  • 2 Tbsp. melted butter

Preparation:

Preheat oven to 425ยบ. Peel potatoes and either julienne into matchsticks, grate roughly, or cut into ultra-thin slices.

Peel and thinly slice onions. Grease a frying pan with butter and lightly fry onions over medium heat until tender but not brown. Remove from heat.

Lightly grease or butter a casserole dish. Place a third of the potatoes in bottom of dish. Layer half of the onions and half of the anchovies on top of the potatoes; sprinkle with salt and pepper. Repeat layer; use remaining third of potatoes as top layer.

Pour enough cream over potatoes to fill dish 3/4 of the way up. Combine bread crumbs and melted butter and spread across top of casserole.

Bake in oven until browned and cooked through, 50 minutes to 1 hour.

Stormy Weather {Photo Mosaic}

Last week, in the Canaries, we suffered a terrible storm that left some parts of the islands without electricity for hours and flooded houses. It´s not something usual, we normally enjoy a nice weather the rest of the year. But Mother Nature is unpredictable...
The house I live in has a very traditional thing here called "patio". Well, half of the roof of the patio flew because of the wind... :( It´ll take a couple of days to fix it.

So here´s my mosaic, remembering the storm.

And here few pictures of the consecuences on the Islands:

And in the end, the rainbow... :)

Come and join the mosaic game on Mitsy´s blog HERE!

Chocolate Mousse Recipe

After long time without sharing any recipe, here it is a recipe I love: Chocolate Mousse.

Ingredients

4 1/2 ounces bittersweet chocolate, finely chopped
2 tablespoons unsalted butter, diced
2 tablespoons espresso or very strong coffee
1 cup cold heavy cream
3 eggs, separated
1 tablespoon sugar
Directions
1. Whip the cream to soft peaks, then refrigerate.

2. Combine the chocolate, butter, and coffee in the top of a double boiler over hot water, stirring frequently until smooth. Remove from the heat and let cool until the chocolate is just slightly warmer than body temperature. If it is too cool, the mixture will seize when the other ingredients are added.

3. Once the melted chocolate has cooled slightly, whip the egg whites in a medium bowl until they are foamy and beginning to hold a shape. Sprinkle in the sugar and beat until soft peaks form.

4. When the chocolate has reached the proper temperature, stir in the yolks. Gently stir in about one-third of the whipped cream. Fold in half the whites just until incorporated, then fold in the remaining whites, and finally the remaining whipped cream.

5. Spoon the mousse into a serving bowl or individual dishes. Refrigerate for at least 8 hours.

I hope you have enjoyed it and let me know if you try it! :)

Carnival In The Canaries

Here in the Canary Islands, there is a great tradition of celebrating the Carnival, so today with these pictures I want to make you trave to my city and enjoy this party.

We choose a Queen, a senior Queen and also a junior. The costumes are very elaborated and heavy, but also very spectacular.

There is a big parade, where everybody can participate and be part of the party. A lot of music, colors and feathers...

Also, we have a big stage where many galas, concerts and events for children are celebrated.

Our Carnival last three weeks and every weekend there are celebrations on the streets, with people dancing disguised with their original costumes.

I hope you have enjoyed this virtual tour ! And if you happen to be in the Canaries this weekend, enjoy the big parade! :)
