Pina Colada Recipe - Summer Drinks

This is one of the most delicious and refreshing drinks you can taste on Summer. Here I bring you today the Pina Colada recipe (or PiƱa Colada if you prefer):

Ingredients:

1 1/2oz. Light Rum
2 oz. Pineapple Juice
1 oz. Cream of Coconut
1/2 Banana
1/2 cup crushed ice


Directions:

Combine all ingredients in an electric blender with the ice.

Blend 20 - 30 seconds. Pour blended mixture into a glass.

Garnish with a pineapple wedge and paper umbrella.

Mojito Cocktail Recipe - Summer Drinks


Today I bring you another recipe of a Summer drink: Mojito.

Ingredients:

  • 2 tablespoons (1 ounce) fresh lime juice
  • 2 heaping teaspoons superfine sugar
  • 1 cup crushed ice
  • 12 fresh mint leaves, plus 5 small sprigs for garnish
  • 1/4 cup (2 ounces) white rum
  • 2 tablespoons (1 ounce) club soda


  • Directions:

    In 10-ounce glass, stir together lime juice and sugar until sugar dissolves. Add 1/4 cup crushed ice. Rub mint leaves over rim of glass, then tear leaves in half and add to glass. Gently stir for 15 seconds, then add rum, remaining crushed ice, and club soda. Gently stir for 5 seconds, then tuck mint sprigs into top of glass and insert tall straw.

    Mint Ice Cream Recipe

    Summer is so close... What a better way to start preparing ourselves for Summer than making a refreshing and delicious mint ice cream. Here´s the recipe:

    Ingredients:
    -26 g. of mint leaves
    -131g. sugar
    -600 ml. milk
    -350 ml. heavy cream
    -1 vainilla bean
    -50 ml. honey
    -1 cup of chopped dark chocolate

    Directions:

    Put the mint leaves and the sugar into the food processor bowl. Process until the mint is finely ground. Warm the milk, heavy cream, and vanilla bean (not the vanilla extract) over medium heat.

    Whisk the egg yolks until smooth, then add the sugar and mint mixture and whisk until combined.

    When the milk mixture is hot, whisk 1/4 cup of the hot milk into the egg mixture, then whisk in another 1/4 cup of the hot milk. This helps temper the eggs so they don’t scramble when you add them to the hot milk. Take the saucepan off the heat and stir in the tempered egg mixture.

    Return the saucepan to the cooktop over medium heat. Add the honey and salt. Cook until about 5 minutes. Do not allow the mixture to boil.

    Quickly set the saucepan into the large bowl filled with ice water to cool the custard. Cover and refrigerate until completely cool, at least 1 hour and up to 24 hours.

    Churn the custard in your ice cream freezer according to the manufacturers directions.

    Summer Cocktail Recipes: Margarita and Daiquiri

    Here you have the recipes of two of the most popular Summer drinks. I hope you will enjoy them!







    Margarita


    Ingredients:



    1/4 cup salt

    1 wedge lime

    2 tablespoons fresh lime juice

    2 heaping teaspoons superfine sugar

    1 tablespoon Cointreau or other triple sec orange liqueur

    1/4 cup tequila

    About 2 cups ice cubes



    Directions:



    Spread salt on small plate. Rub lime wedge halfway around rim of 10-ounce glass. Dip moistened side of glass in salt to lightly coat. Set aside.

    In cocktail shaker, stir together lime juice and sugar until sugar partially dissolves (about 5 seconds). Add Cointreau, tequila, and 1 cup ice cubes. Shake vigorously for 25 seconds, then strain into prepared glass. Fill glass with remaining ice cubes.









    Daiquiri



    Ingredients:





    2 tablespoons fresh lime juice

    2 heaping teaspoons superfine sugar

    1/4 cup white rum

    1 cup ice cubes

    Lime wheel to garnish





    Directions:





    In cocktail shaker, stir together lime juice and sugar until sugar dissolves. Add rum and ice cubes and shake vigorously for 20 seconds. Strain into chilled Daiquiri or coupe glass and drop in lime wheel for garnish.

    Torrijas Recipe (Bread Pudding)


    This delicious bread puding is very typical in Spain at Easter. Really tasty and very easy to make!

    Ingredients:
    32 fl. oz of milk
    olive oil
    16 oz. honey
    16 oz. sugar
    8 eggs
    Slices of bread for 'torrijas'

    Directions:
    Cut a large loaf of bread for 'torrijas' in fairly thick slices. Mix the milk and sugar in a deep bowl. Beat the eggs in a separate dish. Dip the slices of bread in the sugared milk and eggs and fry in a pan with boiling oil until golden brown. Then drain well.
    Place the 'torrijas' on a serving dish and pour honey over them.

    Stuffed Avocados With Prawns Recipe


    For these yummy stuffed avocados you will need:

    -Ingredients:
    ·Avocados
    .Cocktail souce
    ·Prawns
    ·Letuce
    ·Tuna (optional)

    -Directions:

    1) Divide the avocados in half and extract with a spoon a bit of the interior.
    2) With a fork, stir the extracted avocado with the prawns (the prawns must have been boiled before adding them) and the tuna.
    3) Once everything is well mixed, add the cocktail souce and distribute inside the avocados.
    4) Use some fresh letuce to decorate the dish. Keep the avocados in the fridge until they are going to be served.

    Chocolate And Coconut Cake Recipe

    Here is a low budget chocolate cake recipe. This cake is very tasty and the coconut adds a special touch.

    Ingredients:
    -Eggs
    -Dark Chocolate Bar
    -Whipped Cream
    -Shredded Coconut
    -Sponge Cake Layers
    -Hazelnut Liqueur

    Directions:
    -Separate the yolk from the eggs. -Put the chocolate bar (sliced) into a water bath until it is completely melted.

    - Beat the egg whites until stiff peaks up. Mix the yolks with the sugar (two tablespoon, more or less). Then, mix the chocolate with the yolks and beat the mixture well enough.



    - Join the chocolate with the egg whites.

    - In the first cake layer, spread a bit of the hazelnut liqueur.

    - Then spread a first layer of chocolate mousse.


    - Sprinkle the shredded coconut over the chocolate base, and add another layer of whipped cream.
    -Repeat the same process again (as many layers as you prefer).




    And that´s all!
